BBQ Ground Beef and Biscuits

Some nights dinner is the last thing on your mind until you look at the clock and it reads 6 pm. Probably should make something now. My motivation was teetering on little to none so I had to find a recipe in which I had to do very little. We all need those recipes and we all need a break sometimes, this recipe is most definitely a 'break'. It took all of 10 minutes and turned out super tasty. I hope you enjoy it and I hope you like the little change I've been making to my blog posts, music really does help your cooking!

Ingredients:
  • 1/2 cup corn
  • 1/2 medium onion
  • 1 lb ground beef
  • 1 cup BBQ sauce
  • 1/4 cup yellow mustard
  • 1 can jumbo biscuits (8)
  • shredded cheese
Directions:
  1. Preheat oven to directed degree on biscuit package.
  2. In a 9x9 casserole dish place your biscuits, and pound down to make a crust.
  3. Bake your biscuits for about 5 minutes.
  4. Next cook to brown your ground beef in a skillet along with onion and corn. 
  5. Drain beef of fat, then add your sauce and mustard, mixing well.
  6. Pour beef into casserole dish, sprinkle with shredded cheese and bake for 15 minutes or until crust is browned.
  7. Serve!

Crunchy Garlic and Honey Chicken

This week I've been trying to watch more new movies, listen to different music and just accept things for what they are. Right now is what I like to think of as a transitional time for both my education and career options, lately I've had to take on jobs that are unsatisfying and unchallenging while not forwarding my education or what have you at all, but I've been coming to terms with my transitional phase and I accept it as just that. So I am trying to focus on the positive (this is quite new for me, usually I am neutral and try not to focus on either the positive or negative) and to my surprise, it's working. So when I looked at a fried chicken recipe, knowing full well that I have failed many times at making it, I decided to do it and it turned out absolutely delicious.

Ingredients:

  • large boneless skinless chicken breasts
  • 2 cups flour
  • 4 tsp salt
  • 4 tsp black pepper
  • 3 tbsp ground ginger
  • 1 tbsp freshly ground nutmeg
  • 2 tsp ground thyme
  • 2 tsp ground sage
  • 2 tbsp paprika
  • 1 tsp cayenne pepper
  • eggs
  • 4 tbsp water
  • 2 tbsp olive oil
  • 3-4 cloves minced garlic
  • 1/2 cup honey
  • 1/8 cup soy sauce (low sodium soy sauce is best)
  • 1 tsp ground black pepper
  •  vegetable oil for frying
Directions:

  1. In a medium size bowl mix together flour, salt, pepper, ginger, nutmeg, thyme, sage, paprika and cayenne. Place half in a ziploc bag and freeze for next time.
  2. Take your chicken and either slice the long way for 1/2 inch thick pieces or pound with meat tenderizer until 1/2 inch thick.
  3. In a small bowl combine eggs and water for an egg wash.
  4. Take each piece of chicken and coat it in your flour mixture, dip it in the egg wash and then back into the flour for a double coating.
  5. Pour your vegetable oil into a skillet until it's about a 1/4 inch full. Bring to almost high heat (not too hot or it will brown and burn before the chicken can cook fully). Fry for 2-3 minutes on both sides or until brown. Set chicken aside on paper towels to rid it of any extra grease.
  6. In another skillet or fry pan heat up your olive oil and garlic until garlic is soft, not brown. Then add your soy sauce and honey, mixing the ingredients well.
  7. On medium heat take each piece of chicken and coat with honey mix on either sides (little over 30 seconds for both sides).
  8. Serve with rice and veggies!

Baked Egg and Avocado

I am going to keep this one short because I don't think you need me declaring my love of breakfast again and my bronchitis just wants me to go back to bed to rest up. Please enjoy this wonderfully healthy, magically easy and magnificently delicious recipe:

Look at those beautiful colors!

Ingredients (makes for 2):
  • 1 avocado 
  • cayenne pepper
  • salt and pepper to taste
  • 2 eggs
  • parmesan
Directions:
  1. Preheat oven to 425 degrees.
  2. Cut avocado in half and remove pit.
  3. Crack your eggs into the pit crater in each half of your avocado.
  4. Sprinkle with salt, pepper, cayenne and parmesan.
  5. Bake for 15-20 minutes (depending on how you want your eggs)
  6. Serve!
Look how easy that was, I added some tabasco because I like mine spicy but you can just stick to the toppings in the recipe. Well, my belly is satisfied and now I will go nap, like my body wants me too. Happy Eatings Everyone!

Steak and Blue Cheese Pizza

Pizza Pizza Pizza. It's a food I refuse to give up, but sometimes you just can't or don't want to order out so you take on making one yourself. I love my little recipe that I tried the other night, it was messy and scrumptious and will be added to my 'make again' list. The main thing here is, that I like not tasting the grease from take out places on my palette and I love that my homemade concoction can be just as good if not better. So steer clear of the take out and try taking on your own creation tonight!:


Ingredients for Dough (makes for 2 pizzas):
  • 1/2 tbsp salt
  • 1/2 tbsp garlic salt
  • 3 cups flour divided
  • 2 and 1/4 tsp active dry yeast (1 packet)
  • 1 cup warm water
  • 2 tbsp olive oil
Ingredients for topping:
  • 1/2 cup pasta sauce (your choosing of type and how saucy you want it)
  • 1 large flank steak peppered and chopped into strips (cooked)
  • 1/2 purple onion chopped thinly
  • 1/2 tbsp balsamic vinegar
  • 2 tbsp of crumbles blue cheese (i added more due to my love of cheese)
  • worcestershire sauce
  • grated parmesan 
Directions:
  1. Preheat oven to 350 degrees
  2. In a large bowl mix together half of your flour, salts,yeast, oil and water. Mix until sticky and combined. 
  3. Then add your other half of flour and stir slowly until mixture is no longer lumpy.
  4. Separate your dough in half, freeze one half for another time and place your other half on a lightly floured surface.
  5. Next kneed your dough incorporating one more 1/4 cup of flour until well mixed. Flatten out until desired thickness in dough.
  6. Bake for 8 minutes.
  7. In a frying pan cook your meat and onion together in a little olive oil and your balsamic vinegar. set to side.
  8. When your crust is done baking add your sauce. Then add your cheese, onion and meat.
  9. Lightly drizzle worcestershire sauce over your toppings.
  10. Bake for another 8 minutes. 
  11. Sprinkle parmesan over the pizza and serve!
The pizza dough doesn't take long at all, which is a huge help. I hope you enjoy this recipe and eating it as much as we did. Happy Eatings Everyone!

Maple and Dijon Chicken Thighs

I picked out quite a doozy as far as puzzles go. I've been working on it for a few hours today, so I am taking a break by making dinner and watching The 5th Element for the 200th time. Let's just say 'Oh my god, Corbin' this recipe is so good, I want more but I suppose I should save some for Cody. Pshhhaww. Anyway this is a definite make again recipe,  I will probable add a little more maple syrup next time because I enjoyed the sweetness in this recipe. Here you are:



Ingredients:

  • 1/4 cup dijon mustard
  • 2 tbsp maple syrup
  • 1 tbsp olive oil 
  • 1 tbsp soy sauce
  • 1 clove garlic minced
  • 1/2 tbsp dried rosemary 
  • 4 small chicken thighs
Directions:
  1. Preheat oven to 37f5 degrees.
  2. In a small bowl mix together all ingredients save for your thighs. 
  3. Then take each thigh and thoroughly coat each one in the maple mixture. 
  4. Place in a 8x8 baking dish and bake for an hour.
  5. Serve!

Broccoli and Cheese Stuffed Potatoes

Lately my fiance and I have been glued to our television set, I blame Kevin Spacey and Kate Mara. It is their fault anyway for performing as such addicting political characters. Seriously, not being endorsed here, House of Cards is a must see. But let's get to food here, it's what brought you here in the first place and I have a compulsion to satisfying people's needs. Plus, who want's to hear a blogger drone on and on over what she/he did with their night? Especially if it's trite. I don't know about you but I usually skip over those parts until I can just get to the recipe:



Broccoli and Cheese Stuffed Potatoes

Ingredients:
  • 1/2 cup greek yogurt
  • heaping 1/2 cup of cheddar cheese
  • salt and pepper to taste
  • 1 1/2 cups frozen broccoli
  • 2 russet potatoes
Directions:
  1. Set oven to 425 degrees. 
  2. Wrap potatoes in tin foil and bake for 1 hour.
  3. When done let cool for a while.
  4. In a small bowl mix together the remainder of your ingredients.
  5. Cut the potatoes in half, then gut them so there's about 1/2 inch of potato left around the edges. 
  6. Stuff the halves with the cheese mixture. Then bake at 350 degrees for 20 minutes.
  7. Serve!

Salted Caramel Bourbon Milkshake

I came home last night to a mowed lawn, a hot shower and a fiance with a hankering to fix me a treat. What more can a girl hope for? The counter was full of ice cream, caramel toppings and bourbon, it was almost like a dream. I can't take credit for making this because he refused to let me help, sometimes the cook has to put their feet up and let someone else take care of them for a change. So here's the tasty treat I enjoyed oh so much:


Makes 2 milkshakes
Ingredients:

  • 4 cups vanilla bean ice cream
  • 1/2 tsp coarse sea salt
  • 4 shots bourbon
  • 2/3 cups irish cream
  • 1/2 cup caramel topping
Directions:
  1. Place all ingredients in blender and pulsate until smooth.
  2. Pour into glasses and serve cold!
I wish I could drink this everyday but I don't want to be 500 lbs. but for a hot May night, this little devil was a perfect end to a long day. Happy Drinking Everyone!
